Been working on perfecting some favorite Filipino dishes lately. I think we got the barbecue pork skewers pretty much mastered (just need to tweak the fire temps), but the garlic butter shrimp still isn’t up to flavor bomb I experienced in Hawaii. Garlic fried rice is always on point tho

I need my veggies. My favorites were readily available at the Asian grocery, so it was much cheaper to whip these up than spending up to $20 a dish. I was out of garlic, so I cooked these with ginger. Which turned out great!

I was commuting from Dallas to Austin for work that year, and I could never get enough time for lunch to make it to downtown Austin to hit some of the big names in bbq.

As luck would have it this new place had recently set up shop about 15 minutes from the office. It became part of my lunch rotation every time I came down to North Austin, and I even took some bbq on a few road trips back home.

I’m glad to see they finally got the recognition they deserved by landing in the top 10 on #texasmonthly best bbq list.

What’s cookin’? This one is a little hard to explain to non-Filipinos. All I gotta say is Google “pork ruffle fat”.

So I didn’t boil this with aromatics (should not have skipped this step), and I stuck it in the Breville air fryer! Still came out super crispy, though a little funky. But that’s why it’s dipped in spiced vinegar.
