The real estate on the Big Green Egg XL allows for long smoking of several pounds of meat. Here's a plate of beef ribs and Tolucan green chorizo @deepcutsdallas plus marinated pork shoulder roast and @traderjoes chicken andouille sausage. But before the smoke, we set up for high temp grilling to get a nice charb on the wagyu ribeyes.
